Marinade:
(for 12 chops)
- ½ cup (125 ml) olive oil
- 3 tbsp (45 ml) honey
- 3 tbsp (45 ml) wine vinegar
- 2 cloves garlic, finely chopped
- 1 tbsp (15 ml) dried/fresh thyme: 1 sprig
- 15 ml (1 tbsp) dried/fresh rosemary: 1 sprig
- Salt and pepper to taste
Preparation
- Mix the marinade ingredients.
- Place the lamb chops in a glass dish and cover with the marinade (turning the chops over). Marinate for at least 2 hours.
- Remove the lamb from the refrigerator about 30 minutes before cooking to bring the meat to room temperature.
- Preheat the barbecue to medium-high. Remove the chops from the marinade and grill uncovered for about 2 to 3 minutes on each side.
- Serve with grilled vegetables of your choice or a salad.
