Duck breast has an air of elegance that calls for grand evening meals, but since it is easy to prepare, why not cook it more often? A classic of French cuisine that deserves to be known.
COOKING
Frying pan: preheat the frying pan over low heat. When it is hot enough, place the duck breast (without fat), fat side down (previously scored with a knife). Cook for about 10 minutes, then turn over to the other side.
Cooking time (side 2) - pan:
5 minutes - rare
7 minutes - medium
9 minutes - well done
Oven: 350°F (180°C). Brush the duck breast with oil for a crispier edge. Place on a baking sheet, fat side up!
Total oven cooking time:
10 minutes - rare
12 minutes - medium
14 minutes - well done.
